The Neal’s Yard Dairy Stilton is a creamy blue cheese. The typical tang of blue is subdued in favor of a smoother, richer flavor. The tang does exist, however, but merely as an after note. Although the consistency of the body is sticky and crumbly, it holds up to being cut better than some other blue cheeses.

Because of its combination of creaminess and light tang, sweeter foods such as fruit and jam do not pair well with the Neal’s Yard Dairy Stilton. The mixture overwhelms the essentials of each of the parts. This blue cheese does best on its own or spread on some sort of bread or cracker.

Overall, the Stilton is okay. I found it lacking. I wasn’t that satisfied with it, but I liked it a little.
