The Moses Sleeper, a curious name, is a typical brie. Typical in the sense that it has a rather…foul smell. That’s expected of a brie cheese. If it didn’t smell bad or mildly repulsive, that would be interesting. But it smells contrary to its taste, so it fits right into the norm of these soft ripened cheeses.
The thick edges that in case the mushy center is a pasty white. The rind is gummy, again, quite to norm. The entire texture and body of the Moses Sleeper is very expected. Nothing is shocking about its consistency or its form.
What was surprising, in a completely good way, was that the taste was not as potent as some other bries I’ve had. The smell wafting off of it was intense, but the flavor was mellow. A soft spoken cheese that has an almost sweet taste. The experience was pleasant without being overbearing (excluding the smell). It complimented well with, of course, Dalmatia Fig Spread. There are very few cheeses that do not go well with it, but the Moses Sleeper cheese is really brought up with the addition of fig spread. I also tried it and the spread with sourdough bread–another solid combination for this soft cheese.
I don’t often try brie or soft cheeses as the smell usually gets to me, but I was able to get past that hurdle and try the Moses Sleeper. It isn’t a fantastic cheese with a punch of flavor, but, if I were perusing for brie, I would pick it up again because it is on the milder side and thus more tolerable. To those with the same apprehension towards brie yet willing to dabble, I recommend.
