The Standard Market Cave Aged Pauline is a mixed herd cow’s milk cheese from Kentucky that has been aged inside, you guessed it, one of Standard Market’s in-house cave aging facilities. The Caved Aged Tomme de Nena I reviewed previously was also a Standard Market Cave Aged product.
With the Tomme de Nena I was lukewarm on whether I really enjoyed it. With the Cave Aged Pauline, however, I have nothing but positive feelings for.
On the visual side of things, the Cave Aged Pauline looks simple. Like a block of a cheese with an amber hue to it. The body of is on the firm-but-slightly-gooey side of the cheese-texture spectrum. Nothing particularly exciting there or noteworthy, but one doesn’t get a cheese only for its texture. They get it for flavor.
And the Pauline has flavor in spades. It has nutty, buttermilk-like notes that ride themselves out with hearty smoothness. The texture may be soft, but this cheese is wholesome and filling on the tongue. It is enjoyable on its own and paired with fall apples like the Jonagold.
The Cave Aged Pauline is a standout Standard Market cave aged cheese that I would gladly have again and again for its flavor profile and compatibility. I recommend it for anyone seeking a cheese with more body and oomph to it and for those simply wanting a tasty cheese.
