Driftless Sheep Cheese comes in a plastic container and a variety of flavors. The flavors offered are tomato and basil, olive oil, lavender and honey, and plain. I selected the lavender and honey variety.
The texture is fluffy, lighter than cream. Its consistency reminded me of crepe filling. It would pair excellently with a crepe or anything dessert
like. This dessert vibe continues with its the flavor. It is delicate and sweet. The honey was highly subdued; its sweetness lurked under the luscious creaminess. The lavender overshadows the cheese, but not in a bad way. Bits of lavender are visually speckled throughout and the taste is present everywhere. The flavor of lavender is not in the foreground: that position is reserved for a typical dairy creaminess. With every bite there is the taste of lavender, but only as a form of flavor ‘noise.’ The palette is extremely balanced.
The Driftless Sheep Cheese is unlike most cheeses and finds its own ‘groove’ and performs excellently.
