The Mutsu apple is distinguishable for the spots on its skin. The apple I had to take a picture of doesn’t show it, but on most Mutsu they have black freckled spots covering their pale green skin. Some Mutsu’s have a red flush, like the one pictured.
The flavor is what really makes it. The Mutsu begins as sweet with crisp a edge. Not at all overpowering. The sweetness is like a high note that wavers in your mouth. The more you focus on it the more intense it becomes. This exquisite sweetness is countered by an acidic tang at the end. There is refinement to the Mutsu apple; it is balanced. The acidity is gentle, it is what defines it. The apple’s texture is fantastic as well: crunchy and with skin on the thicker side. It feels hardier to chew and fulfilling.
The Mutsu is one of the best apples I have tasted and is one of my favorites.
