This vegan mozzarella from Violife come as a bag of shreds rather than a full chunk of fake mozzarella like the Miyoko’s Mozzarella from way back. It is made from coconut oil, starches, and some other stuff.
Coming as shreds, it is much easier to top pizzas with due to that convenience factor. It didn’t seem to melt that much, looking at it, but tasting it, it was gooey goodness that maintained some stringy texture. Didn’t have a strong flavor, to be expected, but the texture was so…well, cheesy in the best way possible for pizza. Like unctuous without being greasy or sticky, it just was robust in the way you’d want.
So I definitely recommend Violife’s Vegan Mozzarella Shreds for pizza making, probably over Miyoko’s. It feels like it could be used for other purposes too: cheese bread, on soup/chili, and so on with great effect.
