The Zestar apple is one of the apples created and cultivated by the University of Minnesota.
It felt squishier than other apples, just by touch. Not all apples are of dense consistency, so I was not going to judge it based on just feel. I bit into it, the skin was soft, which was what I felt with my hands, but the actual flesh of the Zestar apple was crunchy, but pliable. There was not much resistance once I broke through the first layer of crunch.
Now the taste is interesting. The Zestar apple almost tastes like apple cider. That sort of tart sweetness. I say almost like cider, because it is not very strong. The tartness is very subdued. The taste, although not powerful, really stayed with me because of the amount of juice in the apple.
